I've found that any gluten-free flour mixes that contain bean flour can only be used for savory purposes because their flavor is too strong. I also usually use coconut oil when I need to avoid using cow butter. My favorite gluten-free flour mixture for baking is a combination of Bob's Red Mill gluten-free flour mix, rice flour, and tapioca starch. It seems to have pretty good structure -- I can even make rolled cookies with it -- and a mild flavor. Definitely try the recipe again!
